The Method of incorporation is to make a stock mixture of Glyceryl Monostearate NSE. SE in water in the following manner:

 

i) Heat 6 liters of water to boiling point.

ii) Add 1 kg. Of Glyceryl Monostearate NSE. SE with mechanical agitation.

iii) Stirr the solution till the powder dissolve completely.

iv) Allow the solution to cool.

v) The thick pest which is formed is ready for use.

 

Tests have shown that where a baker is adding fat in lump form to the dough, the amount of fat used can be reduced by more than 50%. Thus the use of Glyceryl Monostearate NSE. SE itself gives loaf a much improved quality at a reduced cost to the baker.

Glyceryl Monostearate NSE SE improve all types of cakes. The optimum concentration to be used will depend on the receipt. But in most cases about 3-4% on the weight of flour is adequate. In cake manufacture 6 liters of water is heated to boiling, heating is discontinued, then 1 kg. Glyceryl Monostearate NSE SE Flakes added & mixed in with a hand paddle or mechanical agitator for several minutes. The mixture is allowed to cool to room temperature & is than ready for use. It is suggested that since no preservative is added, only sufficient should be made up at a time. The best results are obtained when added to the milk, or eggs & mixed on the fast speed.

Margarine consists of an aqueous phase dispersed into oil/fat as a continuous phase.

In margarine, it is necessary to stabilize the liquid emulsion before crystallization to secure a homogenous product and to achieve a finely dispersed and stable water distribution. So that consistency and shelf-life can be improved.

Glyceryl Monostearate NSE as an emulsifier reduces the interfacial tension between oil and water surfaces resulting in a stable emulsion.

Suggested use level is 0.5% on the total weight to be added with the oils at 600 C min. to ensure complete dispersion. Since Glyceryl Monostearate NSE is fat soluble and has a higher melting point than the fat blend in which it is used. Glyceryl Monostearate NSE is dissolved in the fat blend by heating 1 part of Glyceryl Monostearate NSE with 5 parts by 5-100C.

Glyceryl Monostearate NSE can be also used in combination with soya lecithin. The use of soya lecithin increases the solubility of Glyceryl Monostearate NSE so if lecithin is used, it is added together with Glyceryl Monostearate NSE . After complete melting and agitation, the solution mix is added to the remaining melted fat blend during agitation. During emulsification the water droplets, which are formed when water is added to oil during agitation, will come in close contact with oil containing Glyceryl Monostearate NSE . This results in a coating of the water droplets with Glyceryl Monostearate NSE . During increased shear stress, particularly in the tube chiller, less energy is then required to divide the water droplets further and hence water dispersion is improved by using Glyceryl Monostearate NSE .

 

Glyceryl Monostearate NSE provides a smooth mouth-feel and improves spreading properties.

The water present in margarine tends to “Sweat out” after being packed and stored. Glyceryl Monostearate NSE emulsifies this water and stabilizes it in the fat of the margarine.

Because of homogeneous emulsion, Glyceryl Monostearate NSE functions as anti-spattering agent during frying operation.

Addition of 0.1% Glyceryl Monostearate NSE to the yeast in the last mixing operation results in a clean cutting product which is whiter in appearance and does not sweat. Usually 1 kg of 10% water dispersion of Glyceryl Monostearate NSE is used per 100 kg. of yeast. The 10% dispersion is made by adding 1 kg. of Glyceryl Monostearate NSE to 9 kgs. of water at 900 C and stirring till it forms a smooth creamy paste on cooling.

What is Glyceryl Monostearate?

Glyceryl Monostearate NSE (GMS) is an effective emulsifier used in the baking industry available in the form of small beads, flakes, or powders. In addition to emulsification, Glyceryl Monostearate NSE is a thickening agent and a stabilizer.

 

In baking, Glyceryl Monostearate NSE is used to improve dough quality and stabilize fat/protein emulsions.

 

Origin

The first known emulsifier was egg yolk, often used to disperse liquid oil into an acidic aqueous phase. Mono- and diglycerides were first synthesized in 1853 and were extensively used in shortening and margarine formulations by the 1930s.1

 

 

Composition

Glyceryl Monostearate NSE is a non-ionic ester of glycerol and stearic acid. It is soluble in ethanol at 122°F (50°C) but immiscible with water. Glyceryl Monostearate NSE often consists of a mixture of mono, di, and triesters of fatty acids occurring in food oils and fats. They may contain small amounts of free fatty acids and glycerol.2

 

 

Commercial Production

Glyceryl Monostearate NSE is produced either through heating oils/fats with excess glycerol or by direct esterification of glycerol (of animal or plant sources) with stearic acid. The proportion of monoester formed is dependent on the proportion of glycerol and reaction temperature range of 86-140°F (60-80°C). Further purification is carried out by high vacuum distillation.2

 

 

Function

The ratio of hydrophilic to lipophilic moieties, called hydrophilic-lipophilic balance (HLB) is used in classifying emulsions. HLB values range from 0-20 with lower values indicating dominant lipophilic character while higher values indicate hydrophilic character. Glyceryl Monostearate NSE has a HLB value of 3.8, making it lipophilic and suitable for uses in w/o emulsions, such as batters and doughs, dairy and other products.3

 

Glyceryl Monostearate NSE is used in a paste form, i.e. mixed with water and other ingredients to improve gel stability. Glyceryl Monostearate NSE is an unsaturated monoglyceride and offers better stability than other unsaturated monoglycerides, such as oleic acid.4

An emulsion is a mixture of two repel substances (water and oil).It induces a dispersion of undissolved material throughout a liquid. The dispersed phase is dispersed in the other continuous phase. Emulsions are unstable and thus tend to revert to the stable state of oil separated from water spontaneously. Physical energy such as shaking, stirring, homogenizers, or spray processes is needed to keep an emulsion. Surfactants increase the kinetic stability of emulsions and make the emulsion does not change significantly for long term. An emulsifier is a type of surfactant used to keep emulsion stable and well dispersed. Emulsifiers typically have a hydrophobic head and a hydrophilic tail in one molecule. The emulsifiers will surround an hydrophobic molecule and hydrophilic tail form a protective layer so that the oil molecules cannot “clump” together. This action helps keeps phase well dispersed. Some of the most important emulsifiers include salts or esters of higher fatty acids, fatty alcohols, esters of monoglycerides, gelatin, lecithins, polysaccharides and casein.

Glycerides (also known as acylglycerols) are esterified to glycerol with fatty acids. Glycerol haing three hydroxyl functional groups is esterified with one, two or three fatty acids to form monoglycerides, diglycerides and triglycerides respectively. A monolyceride is a compound consisting of one fatty acid chains covalently bonded to a glycerol molecule through ester linkage. Diglyceride and triglyceride consists of two and three fatty acid chains respectively. Examples of triglyceride include triacetin, trimyristin, and triolein. Monoglyceride usually occurs as an intermediate in triglyceride metabolism by means of a release of a fatty acid from lipase. The commercial source may be either animal or vegetable fats, and synthetically produced as well. Mono- and diglycerides are common food additives used as an emulsifier or stabilizer to blend together certain ingredients of oil-hating and water-hating, which would not otherwise blend well.

Starting materials used for making commercial grade Glycerol Stearate (a normal byproduct of digestion) can be obtained from animal fats and plant oils including soya bean, palm kernel and corn oil.
